A spectacular cup of coffee. A cup of coffee is extremely sweet as it contains three times more sugar than any arabica. It has juicy but balanced acidity, where complex notes of pineapple, passion fruit and rose wine intertwine with an amazing guava mouthfeeling and with a long lasting aftertaste.

To je ena najbolj fascinantnih kav, ki smo jih kdaj poskusili v Stowu. Ker raste na 2000 metrih nadmorske višine, kavne češnje dozorevajo počasneje, kar ustvarja visoko koncentracijo sladkorjev, lipidov in organskih kislin, zato je skodelica kave izjemno sladka s sočno uravnoteženimi kislinami, slastnimi tropskimi okusi in neverjetnim občutkom v ustih.

Pridelovalec te kave je Julian Holguin Ramos iz Finca Las Nubes, ki je razvil naravni ekosistem. Ideja je bila ponoviti avtohtono divje rastoče stanje gozda iz Afrike, od koder prihaja ta kava. Kava je anaerobno fermentirana in je bila sušena do 11 % vlažnosti v vrtečih se vrečah.

Kavo v vrečah so vrteli v rastlinjaku, da bi upočasnili proces sušenja. Ta postopek naredi kavo še bolj sladko in z večjo jasnostjo okusa. Ko jo boste okusili bo spremenila vaš pogled na kavo.

Leta 2010 je družina Holguin začela svojo kavno pot v Valle del Cauca v Kolumbiji. Inmaculada Coffee Farms je razdeljena na več posestev: El Jardin, Las Nubes, Monserrat in Inmaculada Concepcion.

It’s one of the most fascinating coffees we’ve ever tasted at Stow. As it grows at 2000 meters above sea level, coffee cherries ripen more slowly, creating a high concentration of sugars, lipids and organic acids. which is why a cup of coffee is extremely sweet with juicy balanced acids, delicious tropical flavors and an amazing mouthfeel.

The producer of this coffee is Julian Holguin Ramos from Finca Las Nubes, who developed the natural ecosystem. The idea was to replicate a native wild growing condition of forest from east africa where this coffee comes from. Coffee is anaerobic fermented and has been dried to 11% humidity in rotated bags.

The coffee in bags were rotated inside the green house to slow down the drying process. This process make coffee even more sweeter and with more flavour clarity. Enjoy this one, it really will change the way you look at coffee.

In 2010, the Holguin family began their coffee journey in Valle del Cauca, Colombia. Inmaculada Coffee Farms is divided up into El Jardin, Las Nubes, Monserrat, and Inmaculada Concepcion.

Inmaculada’s focus on growing exotic varieties and processing them to highlight their terroir is inspiring. Their goal is to “produce the most extraordinary coffees possible.
