Ženska vadi korake plesa San Juan okoli nasada kave v Huili ob sončnem zahodu. Barve neba posnemajo njeno krilo, pristno krilo Sanjuanero, debelo, gibčno in veličastno obleko.

Plesalka krilo drži z vsako roko na koncih in ga dvigne navzgor, da simulira polmesec. Na tej čudoviti podobi je mogoče oceniti vse podrobnosti zapletenosti kostuma: rumene, modre in rdeče žametne rože, bele podplati, nežne zlate vezenine in natančne akrilne poteze.

Kava brez kofeina Sanjuanero iz kolumbijske Huile ima začinjen profil, kjer prevladuje cimet. Sanjuanero je bila brezkofeinsko procesirana na predelovalni postaji Descafecol. Naravni postopek brezkofeinizacije združuje visokogorsko izvirsko vodo in etil acetat (EA) naravnega izvora. EA je prisoten v vsaki kavni češnji v naravnem stanju (pa tudi v številnih vrstah sadja in zelenjave). V tem postopku niso dodane nobene sintetične kemične snovi.

Naravni EA dobimo s postopkom na osnovi sladkornega trsa in je skupaj z izvirsko vodo edini element, s katerim kava pride v stik. Ta postopek z vodnim EA omogoča nežno ekstrakcijo kofeina iz zrn s katerim se izognemo prekomerni temperaturi vode ali pritisku. S tem postopkom ohranimo vse naravne strukture in značilnosti kavnih zrn.


ABOUT COFFEE

A woman rehearses the steps of the San Juan dance around a coffee plantation in Huila at sunset. The colors of the sky imitate those of her skirt, the authentic Sanjuanero skirt, thick, agile, a majestic dress.

The dancer holds the skirt with each hand at the ends, raising it up to simulate a crescent. In this beautiful image, all the details of the complexity of the costume can be appreciated:: yellow, blue and red velvet flowers, white petticoats, delicate golden embroideries and precise acrylic brushstrokes.

Sanjuanero decaffeinated coffee from Colombian Huila has a spicy profile and a bright cinnamon descriptor. Sanjuanero is decaffeinated at Descafecol processing station. Natural decaffeination process combines high mountain spring water and Ethyl Acetate (EA) of natural origin. EA is present in every coffee cherry in its natural state (as well as in many fruits and vegetables). Therefore, are not any synthetic chemical substance.

The natural EA is obtained from a sugar cane-based process and is, together with spring water, the only other element coffee gets in contact with. This water-EA process allows for gentle extraction of the caffeine from the bean, avoiding excessive heat or pressure, maintaining the natural structure and all characteristics of the coffee bean.
