Luis Eduardo Campos je odprl lastno procesno postajo za obdelavo kave, potem ko je celo življenje delal za druga kavne farme in zadruge. Njegovo trdo delo, znanje se mu je izplačalo, saj je danes v svoji panogi zelo poznan po izjemno kavaliteni kavi. Luis Eduardo Campos je svojo strast posvetil eksperimentiranju z različnimi metodami fermentacije in sušenja.

Ta kava, ki vam jo ponujamo pri Stow Coffee je pridelana na edinstven način, s termično fermentacijo. Luis Campos je s preizkušanjem pri enem od svojih testov opazil, da se sladkorji v sluzi karamelizirajo na poseben način, ko v fermentacijske posode, kjer poteka običajen anaerobni proces, dodamo vodo s približno 80 stopinj Celzija. Zaradi ustvarjenega visokotemperaturnega šoka sladki okusi prodrejo v kavna zrna, kar vodi do spektakularnega profila skodelice.


ABOUT COFFEE
Luis Eduardo Campos opened his own mill after a lifetime working for other coffee companies and cooperatives. His hard work, knowledge, and honesty are well known in the industry.

Luis Eduardo Campos passionately experiments with different fermentation and drying methods. This coffee is processed in a unique way, through termic fermentation, that did not exist before.

By trying out one of his several experiments, Luis Campos noticed that sugars in the mucilage caramelize in a particular way when you add water of about 80 degrees Celsius in the fermentation tanks where the usual anaerobic process takes place.

Due to the generated high-temperature shock, the sweet flavors penetrate into the coffee beans which leads to a spectacular cup profile.
