Kochere Debo je etiopska naravno-suho procesirana kava s polnim in/ali robustnim okusom. Naravno procesirana Yirgacheffe kava ne bi mogla biti bolj različna od mokroprocesiranih Yirgacheffe kav in to v vseh pogledih. To je zelo živahna in okusna kava, kot fermentirano sadje. Bodisi jo boste ljubili ali pa boste sovražili.

Koche Debo kava se prideluje v Etiopiji – natančneje v mestu Kaffa – iz katere izhaja ta kava – ta kraj se pripisuje mestu, kjer so odkrili kavo arabika in še vedno divje raste v gorskih gozdovih v okolici. Kava je ročno obrana in nato na soncu sušena v celem plodu na dvignjenih posteljah v obdobju 4-6 tednov. V tem času se kavne češnje sorte Kurume vsakih nekaj ur obrnejo, da se prepreči plesni in prekomerna fermentacija.

Kava raste na okoli 1950-2150 metrov nadmorske višine (v povprečju) in uspeva skoraj tako visoko, kot lahko, da ne utrpi poškodb zaradi zmrzali in nizkih temperatur, ki vplivajo na rastlino kave. Sorta je Kurume mešana z nekaj drugimi avtohtonimi etiopskimi sortami. Kurume je zelo zanimiv profil lokalne sorte, saj je zelo specifičen za to majhno območje in je glede velikosti manjša od drugih tipičnih zrn, a ima tudi zelo sladko aromo, ki daje zelo aromatično skodelico.


ABOUT FARM

The Kochere Debo is an Ethiopian natural coffee, full or robust flavour. Natural Yirgacheffes could not be more different to washed Yirgacheffes in every way. This is a very funky coffee, which some people translate as delicious, some people as fermented fruit, you will either love it or you will hate it.

The Kochere Debo coffee is grown in Ethiopia — in the town of Kaffa to be exact – from which this coffee derives its name – that is attributed with the discovery of coffee and it still grows wild in the area’s mountain forests. Coffee is hand picked and then sun-dried in the cherry on raised beds over a 4-6 week period. During this time the Kurume and other heirloom varietals cherries are turned every couple of hours to prevent mould and over-fermentation.

The coffee is grown at around 1950-2150 metres altitude (on average) and is nearly as high as you can go without frost damage and low temperatures affecting the coffee plant.The varietal is Kurume and other heirloom indigenous Ethiopian varietals. the Kurume is very interesting though, as it’s very specific to this small area, and tends to be smaller in size than other typica/heirloom beans but also has a very sweet flavour, giving a very aromatic cup.
