Ekata farm se nahaja na pogorju Baba Budan Giri v znameniti indijski regiji Karnataka na jugozahodu Indije na nadmorski višini
1500 metrov. Ekata farm v sozvočju s pridelovalci kave in skupino strokovnjakov za kavo stremi po izjemni kvaliteti obdelavi kav s
poreklom. V zadnjih letih vso svojo energijo in znanje vlagajo v inovatovnost fermentacij in ostalih procesnih metod. Rezultati so očitni
saj njihove kave dosegajo izjemno visoke ocene.
Naše sodelovanje se je zgodilo po naključju, ko smo se srečali na sejmu World of Coffee v Berlini. Bili so čisto navdušeni nad našim delom
in vizijo. Od takrat smo testirali na desetine vzorcev kav, ki so nam jih predstavljali. In letos je končno prišel pravi čas, ko smo med vsemi
temi vzorci kav okusili eno kavo, ki nas je posebno fascinirala in dokončno prepričala.
Za Stow je Ekata farm pridelala poseben lot sorte sln9, ki uspeva na najvišji legi posestva na 1500 metrov nadmorske višine. Kavne češnje
so bile ubrane pri polni sladkorni zrelosti in nato dodatno ročno sortirane. Kavne češnje so položili v poseben rezervoar, kjer so jih ob
kontrolirani temperaturi fermentirali 48 ur brez prisotnosti kisika (anaerobna fermentacija). Po fermentaciji so kavne češnje položili na
od tal 1,5 metra dvignjene posteljice in jih sušili na soncu.
Posebnost te fermentacije se izraža v njenem polnem telesu, kompleksnosti okusov z lepimi uravnoteženimi kislinami in dolgem
pookusu.


ABOUT COFFEE
Ekata farm is located on the Baba Budan Giri mountain range in the famous Indian region of Karnataka in southwestern India on 1500
metres altitude. In harmony with coffee growers and a group of coffee experts, strives for exceptional quality of originating coffee
processing. In recent years, they have invested all their energy and knowledge in the innovation of fermentations and other process
methods. The results are obvious as their coffees score extremely high marks.
Our collaboration happened by chance when we met at the World of Coffee trade fair in Berlin. They were impressed with our work and
vision. Since then, we have tested dozens of coffee samples they send to us. And this year, the right time has finally come, when we
tasted one coffee among all these coffee samples, which particularly fascinated us and finally convinced us.
For Stow, Ekata farm produced a special lot of the sln9 variety, which thrives on the highest position of the estate at 1500 meters above
sea level. Coffee cherries were harvested at full sugar ripeness and then further hand-sorted. Coffee cherries were placed in a special
tanks, where they were fermented at a controlled temperature for 48 hours without the presence of oxygen (anaerobic fermentation).
After fermentation, the coffee cherries were placed on 1.5-meter-high beds and dried in the sun.
The peculiarity of this fermentation is expressed in its full body, the complexity of flavors with beautiful balanced acids and long
aftertaste.
