O FARMI

Don Francisco in njegova žena Blanca Nieve živita zelo visoko v gorah Jinotega v Nikaragvi. Pridelujeta izjemno kakovostno kavo in del svojih kmetij ohranjata v naravnem, gozdnem stanju z namenom, da zaščitita izvirsko vodo. Farmo imata na tako visoki nadmorski višini, da se njihova kava pobira polna dva meseca zaradi hladnejšega podnebja in povečanega oblačnega pokrova v mikroklimi na njihovih kmetij. Počasno dozorevanje kavnih zrn jim omogoča, da le ta vsrkajo vase več hranilnih snovi, s čimer nastanejo bolj kompleksne arome. Don Francisco in Blanca Nieve znatno vlagata v zširitev proizvodnje in v krajšanje časa transporta obranih kavnih češenj do procesne postaje v dolini za sušenje njihove kave na soncu.


ABOUT FARM

Don Francisco and his wife Blanca Nieve live very high up in the mountains of Jinotega, Nicaragua. They produce exceptional quality coffee and leave a part of their farms in their natural, forest state to protect spring water that bubbles to the surface. They are at such a high altitude that their coffee is harvested a full two months after the rest of the country’s coffee due to the colder climate and increased cloud cover in their farms’ microclimate. The coffee beans’ slow maturity allows them to collect more nutrients, producing more complex cupping notes. W e work especially hard with Don Francisco & Blanca Nieve and provide their family financing, which they have invested into expanding their production significantly and into improving their truck so that they can cut down on the amount of time it takes to get coffee from the mountain down into the valley for sun-drying.
