Ratnagiri Estate se nahaja v Bababudnagiriju na vrhu gorovja v jugozahodni Indiji. Na kmetiji s površino 285 hektarjev gojijo sorto Catuai in Chandragiri na 1250-1450 metrov nadmorske višine. Ta posest deluje že desetletja in prenaša znanje iz generacije na generacijo. Medtem mlajši sin Ashok nadaljuje s tradicionalnimi kmetijskimi praksami. Veliko let je potoval v izvorne države, obiskal znane kmetije in izkoriščal najboljše prakse in jih vključil v svoje delovanje na Pearl Mountainu. Njegova kmetija spodbuja senčno gojenje kavovcev s tremi zgodbami sence. Na kmetiji živi več kot 48 zabeleženih populacij ptic, opic, leopardov, divjih prašičev, tigrov, mungosov in občasno tudi slonov.

Honey Ratnagiri je njihova prva kava pridelana po tej metodi. Po obiranju se kavi odstrani kavna lupina in z ostankom nekaj sluzi na pargamentni lupini, nato kavna zrna sušijo na dvignjenih ležiščih za 16 do 20 dni, kjer se izvede nadaljnje razvrščanje in priprava za te mikrolote. Kava se na dvignjenih ležiščih med sušenjem obrača vsake 3 ure od prvega dne do zadnjega dne sušenja in se zvečer pokriva.


ABOUT FARM

Ratnagiri Estate is situated in the Bababudnagiri at the top of a mountain range in the coffee producing area in Southwestern India. The 285 acre farm grows catuai and Chandragiri varietals at 1250-1450 masl. This estate has been in operation for many decades, being passed down from grandfather, to father to son. While initially the son, Ashok, continued traditional farming practices. He has since spent many years travelling to origin countries, visiting well-known farms and taking from the best of their practices and incorporating it into his operation at Pearl Mountain. His farm is a lush shaded environment with 3 stories of shade. The farm is home to over 48 recorded bird populations, monkeys, leopards, wild boar, tigers, mongoose and, on occasion, elephants.

Produced in the Ratnagiri Estate, this is their first ever Honey Processed coffee from this harvest. After picking, the coffee is de-pulped leaving some mucilage and is then dried on raised beds for 16 to 20 days, where further sorting and preparation takes place for these microlots. The coffee is raked and turned every 3 hours from the first day of drying, and covered in the evenings.
